Update

I haven't posted for a while because school started to get busy. I got down to 177.0, but temporarily gained 2 lbs. lol.

The other day I was chatting with a Deaf friend, who just started to laugh because my hands were so ORANGE. Maybe I should lay off the carrot juice... :)

I keep hearing a commercial that makes me feel awesome. It is advertising some dumb green tea thing, but it says "Are you trying to lose those extra holiday pounds?...Don't get down on yourself, just get to work" or something like that. I love that I already have lost the weight. Actually I didn't gain any over the Holidays, so basically...I'M AWESOME! BA HA HA!!

I hope that you too are finding success in your weight-loss journey. You always have an anti-sugar friend in me!

I feel SOOO great! I am no longer in the 80's!! I have worked so hard, and it is so great to literally see the pounds shed off! Thanks to all who encourage me! You guys rock!

Steak Night!

So Matt has inventory at work, which means that I may not see him until I wake up tomorrow. :( I totally hate when he has inventory, but I'm grateful he has such a great job, so I can't really complain. Plus who doesn't love overtime, right? lol.

I tidied my house up a little, then hit the books for a while. After I finally gave in to the fact that I was hungry, I decided to pull out my cook book created by the wonderful people at Pioneer Comprehensive Medical in Draper, Ut, specifically Dr. Hugo Rodier, who created this miraculous cleanse that I am doing. The first page of recipes is all about steak. SWEET! That was totally what I was in the mood for!

After 14 hours in line at Wal-Mart, I am finally eating this delicious plate of yummy-ness, and I just HAD to share the recipe. It is soooo good. Happy eating!

Steak and Carmelized Onions
10 oz strip steak, visible fat removed
Olive oil spray
1 Cup sliced red onion
1/2 Cup Chicken Broth
4 Medium sized garlic cloves
1/2 Portobello mushroom, sliced (3 cups)
Salt and freshly ground pepper

Line baking tray with foil and place under the broiler. Spray steak with oil on both sides and set aside. Heat a little oil in a small non-stick skillet on medium high and add the onions. Saute 1 minute. Add chicken broth, cover with lid and cook on high for 3 minutes. Uncover and cook another minute, or until all the liquid has evaporated. Add garlic and mushrooms, saute for 2 minutes. Season with salt and pepper to taste. Remove the hot baking tray from broiler and place steak on tray. Broil 4 minutes for 1 inch steak, 2 minutes for a thinner one. Turn steak, salt and pepper cooked side. Broil 4 minutes for thicker steak, 2 minutes for thinner steak. Transfer to plates. Smother with onions and mushrooms. Serve. Yum!

I didn't follow the recipe exactly, but it was still so good! I used sirloin steak, chopped garlic from a jar, regular mushrooms, frozen onions, and cooked it on my Foreman. I hope you enjoy it as much as I did!

Weigh-in

181.0! That means I have lost a total of 14.4 pounds since Dec 28th, 2009. Basically I'm awesome.

The Joy of Food

Anyone who has started a diet, a cleanse, a..well ANYTHING in an effort to lose weight quickly figures out 2 things: It's hard, and the food is BORING! As I have been working to achieve my goals, I have run into this same problem. I made my yummy chicken salad, and made sure to add spices to give it a little something extra. I made a really great soup, and again, added spices to keep it interesting, but this woman cannot live on chicken salad and soup alone. GIVE ME VARIETY! Even the deviled eggs aren't evil enough.

A few days ago I was STARVING. I had meat cooking in the pan, as well as asparagus sauteeing. In my grocery store adventure earlier that day, I bought several veggies, including mushrooms. I decided to add that to the asparagus and what happened next was bliss. I couldn't wait for my meat to finish cooking, so I started snacking on my little "side dish", but ended up eating it all before the meat was done. It was SOOO good! Am I the only one who has never tried this?

I have come up with a few concoctions that are oh-so-tasty, and extremely healthy. The best part? They aren't the same boring stuff you always eat! WOO HOO! If you have any ideas, email me and I will post them on my blog. Here's what the latest creations are: (don't expect anything grand. I'm easy.)

Almost Quiche:
2 Eggs
Some broccoli, chopped into small pieces (maybe 1/8 cup?)
1 heaping tablespoon chopped onions
1 tsp Real Bacon Bits. (You know the kind you buy at Costco?)

Saute the broccoli in EVOO for a few minutes, then add the onions and bacon. After a few minutes, add the eggs. BAM! Yummy, healthy, quick food.

Mushroom and Asparagus:
A few mushrooms.
A few more stalks of asparagus
(I know, it's really complicated)

I chop the asparagus into pieces about 1.5-2 inches long. Saute in EVOO until it is bright green. Then add chopped mushrooms, saute until the asparagus is soft.
This tastes especially good when you put it on a grilled chicken breast, or just chop the chicken and add it in the mixture!

Tonight I am making Spaghetti Squash with ground Chicken Meatballs. I add Marinara sauce, sauteed mushrooms, and anything else that sounds *potentially* good. This is also yummy if you shred Zucchini to add to the spaghetti squash, but I don't have any, and I don't feel like going to the store for the 3rd time today...except that I need mushrooms...hmmm.

Here's to fitting in more of my clothes!

The Biggest Loser

Hey everyone! Well, I figure it's about time I start blogging again. Here's what's happened since my last post in...July

Nothing.

Well, mostly true, anyway. I started to have pretty severe lower back pain, so I stopped going to the gym for a bit. Then it got worse, blah blah blah. Well, Matt's and his cousin Reed started going to the gym everyday, which, like any jealous puppy, made me decide I wanted to start going again. I was still in pain, but it was kind of alright....Until I got rear-ended by some silly boy who I believe was texting.

Then it started to get worse, and I stopped going to the gym. My clothes have been progressively getting tighter, until I bought new pants for work. Yes, it came to that. I was seriously using a rubberband to "button" my pants up. (Wow, I really have no shame on this blog!)

I thought about my options, and made my decision. I needed to get through school, more than I needed to lose weight. Last semester was really stressful for me, but don't worry. I made it! A few days after the semester ended, we headed for Disneyland. YOU try to eat healthy there, and then we'll talk about what I ate. (Oooh, delicious funnel cake....) :)

We came home on Sunday, and by Sunday night, I decided that I'd had enough. The games were over. I said good bye to sweets and refined carbs, and all that crap I was eating. Oh, did I mention that I am supposed to eat gluten-free?

Well, that Sunday was Dec 27th. I weighed in last week at 194.4, but then it went up to 195.4, so I am using that number to measure my weight loss because I can. As of this morning, I am at 185.8!! It was so amazing to see me weight drop down so fast. My clothes already fit SO much better, and I feel so great, not just physically, but mentally too! I can do anything!!

Many of you have asked what I am doing. Well, I don't want to be selfish, so I will tell you. I am doing a cleanse. Now, before you judge me and think "Well, she'll just gain it back", Let me tell you what I am doing, as well as my past experience.

For 2 weeks I am eating nothing but chicken, certain kinds of fish, eggs, and most vegetables. (Corn is a grain, which comes later. No potatoes for now either.) I have a stock of "modified" deviled eggs in my fridge, as well as "modified" chicken salad, and soup. By modified, I mean that I am using light Miracle Whip, and I am using just enough to make it all stick together. Plus I add dijon mustard, a little paprika and BAM! Yummyness at my service. For the chicken salad I do the same thing-easy on the light Miracle Whip, plus I add celery, green onions, whatever. For the soup, I found a bunch of veggies that I had such as stewed tomatoes, peas, green beans, mushrooms, etc, plus cooked chicken and threw it in a pot. Add some parsley and voila! So good. Avacados are a MUST! I don't care for guacamole, but that is fine too. I drink carrot juice, which I actually do like. You can buy it at Costco. It tastes really yummy if you add celery juice too. (You have to make that yourself) I lightly snack on almonds, too. They are great for a quick fix.

For breakfast I make scrambled eggs with a *little* bit of bacon bits (the real stuff from Costco), which I know is not part of this phase, but I'm ok with that. Then I add chopped onions, and top it off with salsa.

I eat a lot of salads, with almost no dressing. Most of them usually have a lot of sugar in, so I will find a good healthy dressing recipe, and post it on here. I usually dip my fork in a cup of it.

On Sunday night I will be able to add fruits back in to my diet. One thing my mom mentioned to me about fruit is that it is vital to eat the whole fruit, not just the juice because it is missing the fiber, and your body needs that for balance.

If anyone is interested in trying this, you have a support group-me. I would recommend starting out by adding a lot of salads into your diet, and cutting out the crap, then start this. You need to dedicate yourself to yourself. Many people think that this is a diet. That is absolutely not true. By the end of this cleanse, you will be eating how your body was built to eat.

Well, anyway that is enough of me. If you want to know more, let me know! I am happy to share what I know.
